Saturday recipes - Sandwiches!

Today I dream of all this being on my breakfast menu next week - just not on the same day :)

Buck Rarebit (Welsh Rarebit with Spinach and a Poached Egg)

Welsh rarebit is actually a melted cheddar cheese sauce that commonly contains ale, Worcestershire sauce and mustard and it is served warm over toast. Kevin says that you really cannot go wrong smothering something in a tasty cheese sauce or a runny egg yolk and the combination of the two is amazing - I absolutely agree! 

Asparagus Grilled Cheese Sandwich

It's simple but the presentation is so creative, it looks so delicious! Kevin used oka cheese and roasted the asparagus for few minutes to enhance its natural flavour but you can use your favourite cheese instead.

I love figs, I love brie and I love prosciutto but I'd never think that all three together would make such a great combination! Since we're talking about combining fruit with meats I couldn't fail to mention this sandwich:

I found the recipe on www.cookinglight.com which is great for super-fast, healthy and easy to make snacks. I really like the blend of savoury and sweet flavours here. 

Mushroom Croque-Monsieur

A croque-monsieur is a hot ham and cheese (typically emmental or gruyère) grilled sandwich. It originated in France as a fast-food snack served in cafés and bars. It's topped with a classic Mornay sauce (a béchamel sauce with cheese). 

Egg Sandwich with Spinach, Brie and Maple Bacon

This recipe is from Framed Cooks which is such a great source of inspiration that I check every day because I just can't wait until the next recipe appears :) The sandwich is made with toasted English muffin smothered with brie cheese, sauteed baby spinach, bacon and egg. Delicious!

Strawberry-Mozzarella Stuffed French Toast

We have grilled cheese again, this time it's mozzarella dipped in an egg batter then toasted in a hot pan until it is crispy on the edges and hot & gooey in the middle. I love French toast especially with fresh fruits. It's sweet, fruity and creamy, perfect summer breakfast!
